Classes can start with the basics like how the softwares work, having little assignments to understand the idea. We can set goals in terms of music or genre, maybe a specific song. Then the process will be analize it and try to create something similar in a short base (like 1-2 min of the song). For more advanced techniques, we can start with basic mixing or even arrangements for songs that students might have worked before.
