Teaching someone is about knowing what gaps in their knowledge they need filling and how they will best respond. Having a chat with the student about what they feel they need is the best way to understand this, looking at some of their work helps too as for building trust I find that one of the best ways to do this is playing a game or doing some activity not related to learning so they can feel comfortable with you outside and inside that space.
