Children learn very well and very fast, but the key is to keep their attention. These sessions can be fun, interactive and less formal than if it were to prepare the children for national examinations. There can be a theme every week. For example, "Ordering Chinese Takeout" or "Visiting Chi Chi and Ming Ming At The Zoo", and so on. I would take the first 5 minutes of each lesson to ask them how they have been in the previous day or week, and use prompts for them to practise the vocabulary from the previous session. There would be another 15 minutes of teaching new vocabulary in line with the theme of the week. Then another 10 minutes for the students to practise writing the characters. This can be followed by a 10 to 15-minute game where they match words to pictures, or Chinese words to the English word. After a few sessions, at a more advanced stage, this part of the session can be expanded to have a sentence-building activity which would give students a chance to learn pronouns, articles etc and to identify subject and predicates. We will spend another 10 minutes to quickly go through what we have learnt in that session. This part can be rapid-fire quizzes with mini prizes or special points. The final few minutes should be a chance for the children to talk about what they wish to learn about (within a defined scope) the following week, so that it gives them a sense of ownership in their learning journey.
