I have worked in the catering industry since I was 14 years old, firstly in a country hotel, then in many larger hotels and restaurants. I have also worked in schools, colleges, nursing homes and industrial catering facilites. I qualified in 1982 with an OND in Hotel and Catering Operations from Croydon College.
I have trained many new chefs over the last 40 years, from absolute beginers to trainees (commis chefs) who have left college with a qualification, but without experience. The latter recieved on-the-job training, usually on a one-to-one basis.
Recently I ran a course, paid for by Medway Council, at a local community centre. This was for amature cooks who needed to know how to budget for and prepare meals on a low income, whilst still making them very tasty and highly nutritious. It was very successful and I thouroughly enjoyed presenting the very hands-on course that lasted a week.
I will be new to online tutoring but I am pretty good with modern technology, so I can teach people wherever they are based. I prefer to give one-to-one training locally as I'm an environmentalist and don't like to travel too far, so this means I can do this within the Medway and Maidstone areas of Kent.
It will be up to you how you want to learn, what you want to learn, how fast you want to go and at what level you want to begin. I have experience in traditional British, French, Italian, Spanish, Greek, Asian and Oriental dishes.
