I include a mini quiz at the end of each lesson to make sure they have taken away the necessary information. At the end of every 4 lessons, or the end of a topic I like to include a more comprehensive test to make sure they are absorbing the necessary information.
I use visual aids as I believe these are so important. The use of videos after the lessons I also believe is a key component to strengthen what was learnt in the lesson. I believe the most important thing is practical application. If the topic was about carbohydrate for example I would bring different carbohydrates with me and we would discuss them, why they are important and what they are made of. We would then, if it was possible, to go to the kitchen to see how the different foods change with cooking/cooling.
