I enjoy using the presentation, practice, production method.
First presenting what is wanted to be learnt by eliciting the student into telling me what they already know. Then building off of that to allow a foundation. Sometimes using a story or giving relatable context makes this easier - this can vary between students. Drilling methods and repetition may be used to help build the students confidence.
Practice allows the student to do activities where the information learnt can then be applied to a controlled activity. this again leaves room for confidence building. If any mistakes are noticed a repeat of the presentation stage can take place to solidify previous content.
Production then allows the student to use the content in a more relaxed way which is still controlled but allows the student to work more freely. This may be by using the content in their own dialogue or doing harder activities which allows them to work more independently with less prompts.
I prefer my lessons to be the student having control by 25% of the time is me talking and 75% the student. I believe this is better as I find that when teachers talk too much it can become boring and make you loose attention. As well as being overwhelming to retain the information being told.
