Lessons can either target an area of your own interest on a per session basis, or a set structure typically spanning 2-12 weeks depending on your requirements. Lessons can cover an entire concept from scratch, or add upon existing knowledge to help you hone your edge.
As an example, an introductory lesson on mixing would start with learning - in summary - what the process entails, as well as what our desired outcomes might be and what factors affect them. First you would develop an understanding of signal flow, and how each point a signal passes through contributes to the final result, and as such needs to be managed - typically known as gain staging. As lessons progress concepts such as stereo spatialisation and spectral placement would be introduced, eventually building up to more advanced topics of simulating spaces with convolution, and leveraging equal loudness curves for a fuller sounding mix.
