With beginners and intermediate, I'd use a mixture of English and Italian to assess their level and their confidence and adapt accordingly to make them feel comfortable.
With adults and advanced students, instead, it depends on their goal and previous knowledge, adapting the lessons to their requests: is it for pleasure, work, or education? Once the main question is answered, the tutoring will be shaped accordingly.
Lessons will also be of a different nature, depending on whether their need is purely linguistic and conversational, thus focusing on speaking and grammar, or if a deeper knowledge of literature and history is needed, which would require a different structuring of the lessons, depending on the knowledge of the language itself.
If the language is needed for clear work purposes, by companies or single people, tutoring will be shaped in accordance with the purpose of the job and whether specific subjects need to be addressed.
Methodology might also vary throughout the duration of the tutoring, to follow the progress and enhancement of the student's knowledge and needs.
