From my experience, discussing a wide range of topics and later writing about them to consolidate knowledge is one of the best ways to learn a language, so I would structure my lessons around this with flexibility to account for different students' differing learning strategies. I think it's good to learn more about students and focus on speaking in the target language about their interests as a foundation and then building on that learnt knowledge to discuss a greater variety of subjects.
I would also utilise different materials like news articles and TV and film to further hone language skills. With the huge amount of different shows and films available, it is even easier to find something for everyone and use that to keep up their enthusiasm for speaking the language.
